Be it veg or non-veg, Besara adds a unique flavour to Odia dishes. Today, we will be preparing chicken besara in which chicken is cooked in mustard sauce and some grounded spices. This flavourful chicken curry is known for its distinctive taste, primarily derived from a mustard-based paste. The dish uses minimal ingredients and is very quick and easy to prepare with items available in every household. Ingredients: 1. 500 grams chicken leg pieces, cleaned and cut into pieces 2. Salt as per taste 3. 1/2 cup tomatoes, chopped 4. 1 tsp turmeric powder 5. 1 tsp red chilli powder 6. 2 tbsp mustard seeds 7. 1 cup onions, finely chopped 8. 3-4 sprigs of curry leaves 9. 5-6 green chillies chopped 10. 1 cup oil 11. 1 lemon 12. 1 cup mustard seeds paste Method In a bowl, mix the chicken pieces with salt, turmeric powder red chilli powder, lemon juice and mustard paste. You can also add some of the chopped green chillies to the marinade. But this is totally optional and you can skip it. Allow it to marinate for about 15-20 minutes. After 15-20 minutes, heat oil in a kadhai, now add the mustard seeds, curry leaves, chopped onions and fry it for few minutes till the onion turns golden brown in colour. Add the marinated chicken to the kadhai and stir it continuously for few minutes till the oil separates. Once the oil separates, add the chopped tomatoes to the chicken and cook till the tomatoes become soft. Now add around a cup of water to the chicken and let it cook on low flame until it is tender and the flavours are well infused. Add salt and spice levels according to your taste. Your chicken Besara is ready now. You can serve it hot with steamed rice or any Indian bread of your choice. Do try this delicious chicken recipe and share you experience with us.
