Winter is here. And one of the most easily available vegetables is carrot or gajar. Gajar Ka Halwa is one of the classic Indian desserts. In winter particularly, this sweet dish is made to satiate our taste buds

Ingredients for Gajar Ka Halwa:

  1. 5 tbsp ghee
  2. 1 kg carrot, grated
  3. 1 ltr full-fat milk
  4. 10 tbsp of sugar
  5. Almonds, soaked
  6. Cashew nuts, soaked
  7. Raisins, soaked
  8. Pistachios, soaked
  9. 1 tsp green cardamom powder

Gajar Ka Halwa preparation method:

  • Heat ghee in a wok, add carrot, and saute it for a few minutes.
  • Add milk, cook the carrot in milk for 30-45 minutes until the milk dries, and keep stirring it occasionally.
  • Add sugar, almonds, cashew, raisins, pistachios, green cardamom powder, cook the halwa till the milk has completely reduced.
  • Gajar Ka Halwa is ready. You either have it while it is warm or cool down it before gorging upon it.

Instructions for Gajar Ka Halwa:

If you don’t get enough time and are in a hurry, you can pressure cook the carrot with milk for 2-3 whistles.
