Looking at a joyous way to celebrate Christmas? Why not try your hands at various cuisines at home this year? Here are two simple, quick, healthy, easy-to-make cake recipes which you can bake at home.

Fruit Cake

Ingredients:

  1. Maida/All-purpose Flour: 2 Cups
  2. Sugar: 1 Cup
  3. Butter : 1 Cup
  4. Milk: 1 Cup
  5. Eggs: 2 ( or 1/2 Cup Beaten Curd if not using eggs)
  6. Condense Milk: 1/2 Cup  (optional)
  7. Baking Powder: 1Teaspoon
  8. Baking Soda: 1/2 Teaspoon
  9. Dry Fruits: 1/2 Cup
  10. Tutti Frutti/Candied Fruits: 1/2 Cup
  11. Vanilla Essence: 1 Teaspoon

Procedure:

  • In a mixing bowl, add butter, sugar, milk and condense milk, and mix until it is fluffy and the sugar is dissolved, then add the eggs one by one and combine it with mixture to creamy texture.
  • In a another bowls sieve the flour, baking powder and baking soda.
  • The add these dry ingredients and fold into batter for a smooth consistency.
  • Now add the candied fruit or tutti frutti ,  dry fruits and vanilla essence to the mixture and mix it.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease and flour a baking tray you can also place butter paper. Now pour the cake batter in the tin mould and bake you cake for 40 to 50 minutes.

Tips:

  • While adding the dry fruits always dust them with some flour so they don't stick to the bottom of the baking tray.

Carrot Cake:

Ingredients

  1. Atta/ Wheat Flour: 2 Cups
  2. Sugar: 1 Cup
  3. Cooking Oil : 1 Cup
  4. Milk: 1 Cup
  5. Beaten Curd: 4 Table Spoon
  6. Condense Milk: 1/2 Cup  (optional)
  7. Baking Powder: 1Teaspoon
  8. Baking Soda: 1/2 Teaspoon
  9. Dry Fruits: 1/2 Cup
  10. Carrot: 1 and 1/2 Cup grated
  11. Vanilla Essence: 1 Teaspoon

Procedure:

  • In a mixing bowl, add the oil, sugar, milk and curd, and mix until it is fluffy and the sugar is dissolved.
  • In a another bowls sieve the wheat flour, baking powder and baking soda.
  • The add these dry ingredients and fold into batter for a smooth consistency.
  • Now add the grated carrot,  dry fruits and vanilla essence to the batter and mix it.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease and flour a baking tray you can also place butter paper. Now pour the cake batter in the  tin mould and bake you cake for 40 to 50 minutes.

Tips:

  • You can add more grated carrots if you like it.
  • You can replace sugar with jaggery if you want to make it more healthy.
