Kadai Chicken is a very popular Chicken Dry dish that is made with rich tomato gravy and sauteed along with chunks of capsicum and onions. Kadhai Chicken goes well with naan, roti or laccha paratha according to your preference.

For Kadhai Masala

Ingredients: 

  1. Dry red chillies 2-3 nos. 
  2. Coriander seeds 1 tbsp 
  3. Black peppercorns 1 tbsp
  4. Fennel seeds (saunf) 1 tbsp
  5. Jeera (cumin seeds) 1 tbsp

Method: 
• Set a pan on medium heat, add the whole spices and roast it for 2-3 minutes or until the aroma is released, transfer to a grinding jar; grind them to a fine powder. Your kadhai masala is ready; store them in an airtight container.

Ingredient required

  1. Chicken 750 gm
  2. Salt to taste
  3. 1 tbsp Ginger garlic paste
  4. 1 tbsp Red chilli powder
  5. 4 tbsp Ghee / oil
  6. 4-5 cloves Garlic (crushed)
  7. 1 inch Ginger (juliennes)
  8. ½ tsp Turmeric powder
  9. 1 tbsp Coriander powder
  10. 1 tsp Jeera powder
  11. 2 tsp Red chilli powder
  12. 1 tbsp Freshly prepared Kadhai masala
  13. 3-4 medium size Tomatoes (chopped)
  14. Salt to taste
  15. Hot water
  16. ½ cup Curd (whisked)
  17. 2 tbsp Fresh cream (optional)
  18. 1 tsp Garam masala
  19. 1 medium size Capsicum (diced)
  20. 1 medium size Onions (diced)
  21. 1-2 nos. Green chillies (slit)
  22. 1 tbsp Fresh coriander leaves (chopped)

How to make

  1. Marinate the chicken with salt, ginger garlic paste and red chilli powder and keep it aside for 15 minutes.
  2. Set a pan on medium heat, add oil, and add the marinated chicken, cook it for 10-12 minutes and further cook it for 7-8 minutes while stirring in intervals on flame low.
  3. Add crushed garlic, ginger, powdered spices and freshly prepared Kadhai masala, mix, and cook for 1-2 minutes.
  4. Add tomatoes and salt, stir, and cook for 3-4 minutes, add hot water to make a thick gravy. Cover and cook until tomatoes are nicely incorporated into the gravy.
  5. Slow down the heat and add the curd to the gravy and keep stirring as soon as you add the curd. Stir and cook until the oil/ ghee is separate.
  6. Add fresh cream and garam masala, stir gently, and cook for 2-3 minutes.
  7. Add capsicum, onions, green chillies and fresh coriander stir gently and cook for 2 minutes.
  8. Kadhai chicken is ready to be served.
