500g mutton (cut into pieces), 2 onions (finely chopped), 2 tomatoes (pureed), 2 tbsp mustard oil, 1 tbsp ginger-garlic paste, 6 green chilies (slit), 1 tsp turmeric powder, 2 tsp red chili powder, 1 tsp garam masala, 1 tsp cumin powder, 1 tsp coriander powder, 1 tsp black pepper powder, 1/2 cup curd (yogurt), 1 tsp kasuri methi (dried fenugreek leaves), 1 bay leaf, 3-4 cloves, 2 green cardamoms, 1 cinnamon stick, salt to taste, fresh coriander leaves for garnish.

In a bowl, mix mutton with curd, turmeric powder, red chili powder, salt, and ginger-garlic paste. Let it marinate for at least 2 hours (overnight for best results).

Heat mustard oil in a heavy-bottomed pan until it smokes slightly. Add bay leaf, cloves, cardamoms, and cinnamon. Sauté for a few seconds, then add chopped onions and cook until golden brown.

Add pureed tomatoes and cook until the oil separates. Stir in cumin powder, coriander powder, black pepper powder, and green chilies.

Add the marinated mutton and sauté on high heat for 5-7 minutes until the meat is well-coated with the masala.

Reduce the heat and let it cook covered for 30-40 minutes, stirring occasionally. Add water as needed for gravy consistency.

Sprinkle garam masala and kasuri methi for enhanced flavour. Let it simmer for another 5 minutes.
