Rasabali, a renowned GI-tagged sweet from Kendrapara features deep-fried flattened chenna cakes soaked in thickened, sweetened milk.
This traditional Odia dessert combines crispy chenna balls with creamy, fragrant milk, making it a delightful treat.
Ingredients for Rasabali: 1 bowl of chenna (cottage cheese), 3-4 spoons of sugar, 3-4 spoons of atta (wheat flour), oil for frying, 1 big bowl of boiled sweetened milk, and 3 spoons of crushed cardamom and black cardamom powder with sugar
Mix the chenna, atta, sugar and 1 spoon of Crushed cardamom and black cardamom powder with sugar and knead it smoothly to form a dough.
Make lemon-sized balls of the dough and keep it aside on a plate.
Apply oil on your palms and flatten each ball gently to form flat balls.
Then heat oil in a kadai and fry the flats balls on a low-medium flame till both sides turn golden brown.
Now, add these fried flat balls to the sweetened boiled milk and garnish with the remaining crushed cardamom & black cardamom powder & your Rasabali is ready to serve.
