Finished with a tempering of cumin, mustard seeds, and curry leaves, and garnished with coriander, it makes a delightful starter or snack that will impress your guests.

Ingredients: 500g boneless chicken cut into bite-sized pieces, 1/2 cup yogurt, 1 tbsp ginger-garlic paste, 1 tbsp red chili powder , 1 tsp turmeric powder, 1 tsp garam masala, 1 tbsp cornflour, 1 tbsp rice flour, 1 tbsp lemon juice, salt to taste, oil for deep frying, fresh curry leaves, 3-4 slit green chilies, 1 tsp cumin seeds, and 1 tsp mustard seeds.

For Tempering: 2 tbsp oil, 1 tsp red chili powder, 1/2 tsp black pepper powder and fresh coriander leaves for garnish

In a large bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cornflour, rice flour (optional), lemon juice, and salt.

Add the chicken pieces to the marinade and mix well to coat evenly. Let it marinate for at least 30 minutes to 1 hour.

Heat oil in a deep frying pan over medium heat.

Once the oil is hot, carefully drop the marinated chicken pieces into the oil in batches.

In a separate pan, heat 2 tbsp oil. Add cumin and mustard seeds, letting them splutter. Sauté curry leaves and slit green chilies for a minute.
